Freekeh Mushroom Risotto

  • 2 tablespoons of olive oil
  • 1 cup of freekeh, soaked in water
  • 1 cup fresh mushrooms
  • 1 small onion, cut into small cubes
  • ¼ cup celery, cut into small cubes
  • 1 garlic clove, minced
  • ¼ cup cooking cream
  • Boiled broth
  • 1/4 teaspoon black pepper, crushed
  • Salt, to taste


  • Soak the freekeh in lukewarm water for a not less than 3 hours or use hot water to speed up the process, drain well
  • In a hot pan, add oil, onions, celery and garlic, and mix until transparent
  • Add the Freekeh and mix well
  • Add a scoop of stock and mix until the freekeh absorbs it and then add a second scoop and mix again and so on until almost cooked
  • Add fresh mushrooms and mix until cooked, then put the cream and season with pepper and add salt as desired and serve.
