Hareesa with grilled chicken and vegetables
Serves: 4 people
Preparation time: 20 minutes
Cooking time: 60 minutes
1 whole, chicken, cut into 4 pieces
2 tablespoons, Hareesa
2 teaspoons, salt
½ spoon, cumin
2 whole, lemons, juice extracted
1 lemon zest
2 cloves, garlic, finely crushed
¼ cup, vegetable oil
½ colored pepper, one half from each color
2 whole, red onions
6 small, potatoes
½ cup, black olives
3 cloves, garlic, peeled
2 sticks, rosemary
In a bowl, mix Hareesa with salt, cumin, lemon, lemon zest, garlic and oil.
Apply this marinade to the chicken and leave it for at least 3 hours.
On a baking tray, place the marinated chicken along with onions, small potatoes, colored pepper, black olives, garlic and rosemary.
Add a little oil and salt to the vegetables. Cover the dish with aluminum foil, and toss it in the oven at 230° C for approximately an hour, depending on the size of the chicken.
Once ripe, remove the aluminum foil, and let the surface of the chicken turn brown before you serve!
