Hummus Salad

Ingredients

  • 1 can, boiled chickpeas
  • ½, onion, sliced
  • ¾ cup, colored peppers, cut in medium cubes
  • ½ cup, cherry tomatoes, cut in half
  • ¼ cup, olives
  • 2 tablespoons, mint, roughly cut
  • 2 tablespoons, parsley leaves
  • ¼ cup, cucumber, cut into medium cubes
  • ¼ cup, cottage cheese

Dressing ingredients:
  • ¼ cup, olive oil
  • 3 tablespoons, apple cider vinegar
  • 1 teaspoon, mustard
  • ½ teaspoon, sugar
  • 1 teaspoon, salt
  • ½ teaspoon, sliced red pepper
  • ½ teaspoon, cumin
  • ¼ teaspoon, black pepper, ground

Steps

  • Mix chickpeas, onions, colored pepper, cherry tomatoes, olives, mint, parsley and cucumber.
  • Mix the dressing ingredients – vinegar, mustard, sugar, salt, slices of red pepper, cumin and black pepper. Then, gradually add oil and stir constantly, until the ingredients are mixed well.
  • Pour the dressing on the salad and garnish with crumbled cheese. You’re ready to serve!
