Kunafa Nablusiyah

  • ½ kg, kunafa
  • 2½ cups, unsalted akkawi cheese, grated
  • 5 tablespoons, ghee
Ingredients for concentrated syrup:
  • 2 cups, sugar
  • 1 ½ cups, water
  • ½, lemon
  • Pistachio, crushed


  • Cut Kunafa into small pieces, and mix it well with 4 tablespoons of clarified butter.
  • Grease the baking tray with a spoon of clarified butter, and add half the portion of Kunafa onto the tray. With pressure, stretch the Kunafa evenly across the tray. Now, add a layer of Akkawi cheese on top, except around the edges of the tray, because the cheese will expand anyway when it melts. Now, add another layer of the remaining Kunafa on top of the cheese, stretched evenly across the dish, and press it all together, so the layers are nicely stuck to each other.
  • Toss the baking tray in the oven at 230° Celsius for 20-25 minutes.
  • Meanwhile, over medium flame, add all ingredients for concentrated syrup in a pan and let it simmer for some time.
  • Let the syrup cool down completely before pouring it on the Kunafa dish. Now, you’re ready to serve!
