Moussaka with goat cheese

  • 2 large, eggplants, cut in large cubes
  • ¼ teaspoon, garlic powder
  • ¼ teaspoon, onion powder
  • 1 ½ teaspoon, salt
  • ½ teaspoon, black pepper, ground
  • ¼ teaspoon, paprika
  • 5 tablespoons, oil
  • 250 grams, minced meat
  • 3 tablespoons, onion, cut into large cubes
  • 3 tablespoons, celery, cut into large cubes
  • 3 tablespoons, carrots, cut into large cubes
  • 1 cup, tomato juice
  • 1 teaspoon, tomato paste
  • 150 grams, goat cheese


  • In a bowl, mix the eggplants with 3 tablespoons of oil, half a tablespoon of salt, a quarter tablespoon of black pepper, paprika, garlic powder and onion powder.
  • Place it on an oil-greased oven tray and toss it in the oven at 230° Celsius for 10-20 minutes until fully cooked.
  • In a hot frying pan, add 2 tablespoons of oil, then onions, carrots and celery, and cook until they become transparent. Then, add the minced meat to it. Sprinkle it with a tablespoon of salt and a quarter tablespoon of black pepper. Stir until tender. Then, add tomato juice and tomato paste, and cook until done.
  • On a second oil-greased baking tray, place layers of eggplant, meat and cheese. Toss it in the oven for 10 minutes before serving!
