Pumpkin with rose water

  • ½ liter, yogurt
  • 2 ½ tablespoons, cornstarch, dissolved in little water
  • 1 ½ tablespoons, rose water
  • 1 ½ kgs, pumpkin, chopped in small cubes
  • 10 tablespoons, sugar
  • 1 tablespoon, butter


  • Place pot on low flame, add pumpkin and 5 tablespoons of sugar. Let the pumpkin melt and thoroughly cook on low flame without adding any water.
  • In a separate pot, add the yogurt and remaining sugar.
  • Just before the yogurt is about to come to a boil, stir in the cornstarch with a little water and add it to the yogurt.
  • Once it begins to boil, stir the mixture continuously using a hand whisk till the yogurt and cornstarch mixture are held together. Then, add rose water, mix and remove the pot from flame.
  • Now, grease a tray with butter and add the pumpkin mixture to the tray. Layer it on top with the yogurt pudding you prepared.
  • Place the tray in the oven at 230 ° C till the top layer turns red.
