Spinach Pie

Ingredients


Dough ingredients:
  • ½ kg, flour
  • ½ teaspoon, salt
  • 1 tablespoon, sugar
  • 2 tablespoons, milk powder
  • ½ tablespoon, instant yeast
  • 2 tablespoons, vegetable oil
  • 2 tablespoons, olive oil
  • 2 tablespoons, yogurt
  • ½ cup, warm milk
  • ½ – ¾ cup, warm water

Filling ingredients:
  • 500 grams, frozen spinach, well pressed
  • 1 small onion
  • 2 teaspoon, sumac
  • 1 teaspoon, Arabic 7-spice mix
  • 1 ½ teaspoon, salt
  • ¼ cup, dried tomatoes
  • 1 teaspoon, pomegranate molasses
  • 2 whole, lemons, squeeze the juice
  • ¼ teaspoon, black pepper
  • 2 teaspoons vegetable oil

Additional Ingredients:
  • 1 egg
  • Small amount of yogurt
  • Fennel flower

Steps

  • Add flour, salt, powdered milk, sugar, yeast, and oil in a kneader or in a container if kneading by hand.
  • Mix these ingredients well, and add yogurt, and some water while kneading, till the dough becomes smooth. Then grease a bowl with oil, and place the dough in it, cover it with a towel, and let the dough rest and rise for 1-2 hours.
  • Meanwhile, mix the filling ingredients.
  • When the dough has risen, spread it on a surface that is sprayed with flour. Flatten the dough till it becomes thin, then cut it into a circle, and create a pyramid shape with the filling inside.
  • On the side, beat an egg with a little yogurt. Brush this mixture on the dough pyramid and sprinkle some fennel flower on it.
  • Grease a baking tray with a little oil and place your pyramid in it.
  • Place the tray in the oven at 230° Celsius for 20 minutes. And you’re ready to serve!
