Sweet Potato Casserole
Serves: 4 people

½ cup, walnuts
½ cup of sugar
2 kg, potatoes, peeled and cut into small cubes
¾ cup, cream
5 tablespoons, sugar
1 tablespoon, cream
2 tablespoons, butter, at room temperature
1 teaspoon, cinnamon
Mix nuts and sugar on low flame till the sugar dissolves, and mixes with the nuts. Stir it all together till the nuts change color to golden. On the side, cover a plate with aluminum foil and grease it with oil. Place the hot sugar and nut mix on this foiled plate. Once the mix cools down completely, pour it in a bag, and crush it.
Next, boil potatoes well, then drain the excess water.
Mash the potatoes into a paste and add cream, sugar, cinnamon, butter and a portion of caramelized walnuts.
Add the above to a buttered casserole and place in the oven for 15 minutes at 220° Celsius.
Garnish with caramelized walnuts and serve.
