White soup with chicken meatballs, cinnamon, hummus and cardamom

Ingredients for Chicken Meatballs:
  • 2, chicken breasts, minced
  • 1 teaspoon, salt
  • ½ tablespoon, ground black pepper
  • ½ teaspoon, garlic powder
  • ½ teaspoon, onion powder
  • Lemon zest
  • 2 tablespoons, parsley

Ingredients for Soup:
  • 2 tablespoons, vegetable oil
  • 3 tablespoons, onion
  • 3 tablespoons, carrots
  • 2 tablespoons, celery leaves
  • 3 pieces, cardamom
  • Pinch, mastic
  • 3 – 4 cups, chicken broth
  • 1 cup, chickpeas, boiled
  • 1 tablespoon, clarified butter
  • ¼ - ½ cup, vermicelli
  • ¼ cup, cream

Steps

  • Season the minced chicken with salt, garlic powder, onion powder, sprinkle lemon zest and parsley and mix it all together. Create small balls and place it in the oven at 230° Celsius for 15 minutes.
  • In a small pot, add some clarified butter and vermicelli, stir till vermicelli turns brown.
  • Heat another pot, add oil, onions, carrots, celery, cardamom and mastic, and mix until it turns transparent.
  • Add the broth and vermicelli mixture into this pot and let it boil until the vermicelli is tender
  • Now add hummus and cream, and add the baked chicken balls on top before serving!
