Whole seabass roasted in oven

Ingredients

  • 1½ kg, seabass
  • 1 whole, orange, sliced
  • Celery leaves
  • 1 tablespoon, large butter
  • Salt
  • Black pepper, crushed
  • 2 whole, onions
  • 8 small, potatoes
  • 10 whole, cherry tomatoes
  • 9 small whole, carrots
  • 5 tablespoons, olive oil
Herb Sauce:
  • 2 tablespoons, dill
  • 2 tablespoons, coriander
  • 2 teaspoons, parsley
  • 2 cloves, garlic
  • 1 teaspoon, coarse salt
  • ¼ teaspoon, cumin
  • 1 whole lemon, squeezed juice
  • ½ , hot red pepper
  • ½ cup, olive oil

Steps

  • Stuff the fish with lemon slices and celery.
  • Smear butter on the fish and sprinkle salt on it.
  • Place fish and vegetables on a baking tray, and season it with olive oil, salt and black pepper.
  • Cover the tray with aluminum foil and toss it in the oven at 230° Celsius for 30 - 50 minutes. Tip: To know when it’s done, insert a wooden stick in the middle of the fish without any resistance.
  • On the side, mash garlic and red pepper. Then, add salt.
  • Now add herbs to it and mash a little more.
  • Add lemon, cumin and olive oil to complete the sauce.
  • You’re ready to serve the fish with herb sauce!
